OEM are like original filco keycaps, and Cherry thick are like Old cherry boards keycaps.

The first one are higher, the second one are shorter, and thicker. Usually, the second kind is preferred. but if you have only OEM keys, order an OEM key.

Yes, of course. Again, for Black and White, you can choose either Cherry thick or OEM thick.
