Where can I find a list of all the keycap shapes which exist in the Cherry profile?

Do you mean the profiles? They only produce Cherry (https://deskthority.net/wiki/Keyboard_profile#Cherry).

If you are interested in getting double-shot moulded keys done, then I suggest that you email a question to GMK. They are the ones that make double-shot keys now.

Every shape that exist now or has ever existed? And in which materials?

If you are interested in getting double-shot moulded keys done, then I suggest that you email a question to GMK. They are the ones that make double-shot keys now.
I want to know what shapes would be available to the organizer of a future GB. I already know they only produce ABS keycaps.

I don't understand the difference between a keycap profile and a keycap shape.
An example of a keycap profile would be Cherry. An example of a keycap shape would be R3 1x1.

Cherry is famous for some nonstandard keycaps, like the off-center 6.25 spacebar and the stepped Caps Lock:

But I was not prepared, that their MY 3000/G81-3xxx series have nonstandard Ctrl/Alt/Win caps too:

Top: B row ISO Shift
Bottom: B row Ctrl
Right: C row stepped Caps
(From some custom branded Cherry XXL Keyboard, G81-3486LUNDE-0)

Does the regular MX 3000/G80-3xxx use center stemmed 1.25U wide Ctrl/Alt/Win caps, or these off-center 1.25U wide ones?

All G80-3000 with Windows keys have centre-stemmed 1.25u modifiers. All G81-3000 with Windows keys have offset-stemmed 1.25u modifiers.
Those are the only non-stabilised keys that are different. A 1.25 Shift key is always centre-stemmed. Caps Lock on G80 and G81 are the same.

As to the other keys:
G81-3000 with Windows keys and in PBT or POM have also different stabilised keys (2u Backspace, right Shift, Space, Enter etc)
The G81-3000 without Windows keys (1.5u modifiers, thick PBT or ABS) use the same keycaps as G80-3000 without Windows keys.
On a G81-3000 with Windows keys and ABS keycaps the Space Bar and 1.25u modifiers are the only keys that are different from a G80-3000 with ABS keycaps. (I think those keys are actually POM)

Stabilizer wires are hooked into the side of the switches.

Caps are lasered PBTs.
