I advise that this set be done in beige and without the extra legends.

I'd love to keep the blue colors intact, but with greek alphas the same as G81-3090SAQ

If beige, i'd consider just buying the greek alphas as a separate kit. If using these alphas there are like 12 keys with MOQ 100?
Yes.

When doing this set I had several options and I was spending quite some time to decide whether to use the busy alphas or not and whether to use beige or olivetti. I personally like all combinations but went with the very busy style cause it's a very unique look. I don't know whether there were just too many keysets available at the time (like 4 other gmk sets and also vintage colourways) or if it was about the chosen legends or the olivetti colours (which were always a niche market tbh).
When I considered to use the same legends as the SAQ board (they also exist as doubleshots and gmk should have the molds) you could either way choose an accent kit with 12 (or 13 if you want a sublegend on the ;: key, I think this is only used on the doubleshot version and not dyesub) or a full gmk set. With Gmk 9009 shipping just few weeks before designing this set I didn't see any market at all for an "even more boring beige set" which wouldn't have any coloured accent keys and with add on kits you need enough people that wanna modify their sets (which also kinda not fits the minimalistic 9009 scheme). Also this legend style was featured in the Hammer BSP drop where many people who were interested in these legends got a set. This group buy hasn't been delivered so far but I guess there is a chance that it'll come back if the new keycap profile by Hammer will turn out nicely.
When going for a 12-key add on kit you would probably pay something like 15€ at 150 moq (I never asked for a quote, this is just an estimation). Selling 150 sets as a group buy is not easy and I don't feel like doing that by myself currently. And investing something between 2000-3000€ for an add on kit to sell it as an "in stock item" is nothing that I can currently do. I don't have any plans to bring this idea back alive this year but we never know how this hobby will develop and what the future will bring.
