I ordered base and icon modifiers, would love the color modifiers and apple kit but sadly these weren't there. Any plans to also bring these back?

Yep. And the RGBYO icon and text modifiers came back today. My order for the common kit and base icon modifiers has already shipped, so I have to pay for postage to Australia twice :'(

Oh well, lesson learned, next time I'll just wait till they have everything I want in one hit. In any case, I've been waiting for Granite for some time, and it's probably 'the' kit that I really had my sights set on, so it's not all bad.

I am not sure if it is smart to wait until all kits are available. The other stuff might have already sold out by then. Or don't I need to worry about that?

Pretty sure that it is going to be permanently out of stock in a couple of weeks, just like every other set on their site despite the excessive pricing. 173 USD to cover a basic board is a bit much. For that price one can almost get a completely custom dyesub set from Decent keyboards.
