To oversimplify, MSG makes the taste buds open up, so that they are waiting to get flooded with whatever is in your mouth at the time.

Basically, it functions like a flavor amplifier, but over time the taste buds can get "burned out" on it, hence the need for even more.

to add to this.. soy sauce is basically msg.. so if you think msg is cheating while cooking, so is soy sauce..

For most of Texas, it would be barbecue (always beef brisket), or chili. Don't forget about shotguns and pickup trucks.
