can i flash qmk/via/vial on keyboards that are not listed as supported in the software website, and/or dont have any confirmed succeeded flashing? how risky is that? is that possible? should i try it?

If a board supports QMK it can be made to use via/vial.
If a PCB has a compatible controller chip which has not been crippled by a manufacturer it can be made to run QMK.
If the chip is not supported and you somehow force a flash you'll have a dead PCB.
Definitely not something to try until you know it's a good idea.
