Well it depends.
Depends, if it's Chili or Chile(how we spell it in New Mexico, it's pretty much synonymous with Chile Peppers too down here), but I'm a fan of southwestern style and southern sweet chili. It's basically America's curry imo. As far as Chile peppers I love Bhut Jolokia sauce, once you get past the heat it's all flavor but I guess depending on the situation the flavor happens first. Though I'm not picky. I've tried just about everything, living in New Mexico is fun for the most part. Esp the National Fiery Foods Festival.
