If I choose an acrylic case and a white POM plate, any ideas how that would look like aesthetically? I thinking that the white plate would stand out.

I can't seem to get 7305s in Europe for a reasonable price.They should work OK, they're longer and stick up more from the top of the board, but I don't think that should cause any issues with the design, you may need to put some foam or something on both sides of the PCB to keep it from moving around with the sockets since it isn't designed for hotswap.
I'll be selling the extra PCBs once the GB orders ship.
