I'm very interested in making a mouse that replaces the super short travel and light touch of the stock switches with a tactile mechanical keyboard switch. Is this something that would be as simple as desoldering the tiny little switches and attaching keyboard switches with wires or would this be a much more involved operation?

Has anyone ever done anything like this?

An MX switch is twice as tall, twice as wide and has about 6 times the travel distance of an Omron D2f (mouse switch).

Can you put it in an existing mouse without absolutely destroying the looks and ergonomics? Pretty much no, mice are built around the switches. What you can do is put in different D2f switches for a different feel or sound.

Yes it definitely would not fit in a standard enclosure. My plan was to build a custom outer shell, and harvest the PCB and replace the Omron switches with keyboard switches. I guess what i'm asking is, technically speaking, if I wired them up would it actually function?

You might want to look at Kailh Choc switches. They are as wide as Cherry MX but except for the central pin, not much higher than a regular microswitch.
There is not a highly tactile variant though: there is a Brown switch which is like MX Brown. Travel 3.0 mm.

D2f switches have a normally open as well as a normally closed so it would depend on which way the mouse is setup as to whether it would be easy or more difficult.

My bet is it would be simple and the more difficult part is going to be everything else.
