I was cooking a steak today for lunch and was wondering what the rest of GH likes in there steak. So here's a simple poll

What's your favorite cut of steak?

Ribeye(but strip/filet/prime sirloin are close)
Grilled(though, I should purchase a charcoal grill/smoker for that best flavor)
medium rare
roasted potatoes (garlic, salt, pepper, olive oil, onions, cheese(which makes a bit of a crust/crunchy bite))
DIY (In fact, my roommate regularly buys steaks for me to cook.  Hooray free steak.  But I did buy the awesome infrared grill that makes me a way better grill-cook)
salt/pepper/paprika/garlic(sometimes garlic butter as it's resting)

Saute mushrooms (sliced not whole) in butter till they are 90% done, put them off to the side. Coat pan in olive oil, cook steak. While steak is resting (YOU HAVE TO REST YOUR STREAKS) add a bit of butter to deglaze the pan and then add mushrooms to complete cooking them + get that nice beef flavor.

Filet Mignon from Outback Steakhouse
Open flame Pittsburgh style (season it with what you like, then put a bunch of whipped butter on top, as the butter melts it chars up on the outside of the steak)
Done correctly the meat is very rare inside still, sometimes even black and blue, and the char + seasoning flavor is delish
At outback I get it with a side of broccoli or green beans with a side of cab sauce for veggie dipping.

At home I did an espresso coffee rub to a filet and seared it in olive oil. My rub was really simple just ground espresso, cracked black pepper, and fine sea salt. I think I was aiming for medium rare and boy was that tasty. Best with some wood smoke grilled asparagus.

Depends. Lots of kosher salt and a little pepper is awesome, but I'm also a big fan of kosher salt, garlic powder, onion powder, pepper, and Worcestershire sauce.

Just putting this out there, but if you need steak sauce, you should just be eating cardboard. GOOD steak shouldn't require sauce



Also, thanks for all of the ideas about how to cook steak. I'll be trying them semi soon. Steak near me cost about $4.75 at the grocery store for one meal (usually flatiron or a smallish sirloin). The only good on-campus burger place charges $6 for a 1/3 cheesebuger with beer batter fries and a drink. Eating steak = cheaper than a cheeseburger

I dislike cooked mushrooms.  Hell, I have issues eating cooked veggies in general.

Just putting this out there, but if you need steak sauce, you should just be eating cardboard. GOOD steak shouldn't require sauce

Worcestershire sauce is more like a seasoned soy, I would call that more of a marinade starter than a seasoning, no more offensive than olive oil or red wine.

i've been using a 10yr+ seasoned cast iron pan/grilled
medium
baked potatoe/sour scream, sautee shrooms
over a bed of romaine lettuce
salt/pepper

the best steak i ever had was medium-rare, paid 40bucks for it, was worth every penny and every meat scrapped off the bone. (it was awesome cuz you just order steak, and they bring it out for you, you don't get to choose toppings, cut or even how it's cooked... the girls did go for medium and medium well and i tried theirs too, i can understand how much better they made mine the way they cooked it, medium rare)

My favorite would be prime rib or anything roasted for that matter. I think tritip or filet is good.

I like my steak M. Rare but some restaurants serve them blue... or brown(which is worse)

Seasoning? The garlic and herbs mix from the Sam's Club.

Favorite resturant would be the Black Angus or Bennihana/japanese style places.

Other parts that should be noted are Ox Tail, which is very very tender.
And Short Ribs!




Garlic mashed potatoes. Mixed squashs.

I'm going to break the trend, I am not the kind of guy who likes potato with his steak.  I'll put up with it, as most places it's the de-facto standard, but not by preference.

Rump steak (don't know what that is in American parlance) a good 350g or so.

Marinaded over night in a little red wine and port, grilled with a twist of black pepper to rare or occasionally blue.

Served with raw broccoli, a small ciabatta loaf, a chunk of Stilton, and a red onion reduction using the juices from the marinade.

I like a reserve rioja to go with it, though my partner is slowly winning me around to new world reds.

I prefer venison (deer, moose) tenderloin, and bring it on damn near raw. Pinch of salt and NOTHING else to mask the wonderful flavor.
My wife I a also push her button . But now she have her button push by a different men. So I buy a keyboard a mechanicale, she a reliable like a Fiat.

Well around here the deer are scarce.  My dad left his wildlife camera in the woods for two weeks and only got one picture of a deer...

Plus, my dad never has time to hunt much anymore.  Between his work and his school (he's getting his MBA) he just never has the time.

Anyways, back to steaks...

Black Pepper Sauce poured over Tenderloin while its still on the plate it was broiled in.

Or if I'm not at a restaurant that does that:

Anything involving Red Potatoes with their skin still in it, though sauteed mushrooms that come with plenty of garlic is up there

That's the thing, my brother lives for hunting. He pretty much hunts anything you can get a tag for. He usually does just bucks for bow season, anything for rifle and then only does musket if he didn't get enough during rifle/bow. My dad and grandpa average 1 between the two each year since they aren't into it as much as my brother.

Edit: Bear steak is REALLY good but also really sweet compare to other meats

You should have held that steak on the fat to give it a bit colour.

Rib eye, pepper sauce. So green peppercorns, brandy, beef stock, creme fresh.
With chips. Not fries! English chips cooked in dripping.

Buffalo > Venison. Also, potatoes are disgusting, no taste and all the texture of cardboard moistened with baby spit. Gnocchi and french fries are good though.

Sauteed mushrooms should be sliced. So much better IMO
