What's the difference in build quality between the current production G80-3000 (https://linkecomputer.com/products/1017191/G80-3000LQCEU-0/Cherry/) and the old rare cherry boards (e.g. G80-1000/3000 HAU)?
I know old boards come with double shot keycaps. How about the case (plastic)? switches? PCB? LED? and Stabilizer?

Old G81s had slightly different MY switches, MX-compatible stabilized keycaps and a metal backplate.
Cherry Corp. abandoned thick PBT keycaps few years ago (and Idk when they discontinued dyesubs), as well as doubleshots.
Some of the old G80s had diodes for proper NKRO.
MX switches have been changed over time. Definitely spring metal (confirmed in MX Blue) and probably the plastic (in case of MX Black older ~ smoother).
G8x-1000 had a sturdier case than the 3000.

Old G80-3000 without winkeys had a larger PCB with the controller on it, filling up the case. The case's walls were thicker than modern ones. Keys were ABS or thick PBT - lasered or dyesub.

Yes numerous differences. The older they are the better all around build quality. PCB have changed too, they used to be nice and thick more rigid, current ones are much thinner and pretty flexy which really dosen't help with the thinner flexier casebody. Old model may have nicer stabilizers as well that don't have the spring bits that make them feel 'mushy'. If you can live without winkey, always go for older ones. You can use most simply ps/2 to usb adapter if needed. Old ones you get so much more with nice doubleshot or dyesub keycap, nicer feeling smoother switch, less flex and depending on model nkro vs 2kro.

Vintage 3000 is winkeyless 101/2 key of Pelevin. Welding cable spring. at the connection. pcb whole. 3 fixing holes. Inline components. There are four fixed shell snaps. Stabilizer 3000 found no change in the design using a snap.
Caps are made of two-color molding, sublimation, laser engraved burning, film printing, ......
3000 is currently selling for wear winkey 104/5 key columns. Cable is pluggable type straight. ps / 2 and usb connection. pcb is split, has a greater, two fixing holes, a small, fixed puncture. Two pcb together. Of course, the diode is in-line, but instead components like capacitors SMD up.
Shell by four fixed buckle changed into eight retaining tabs.
Caps have pbt. pom. And abs. Of course, using the keyboard keycaps abs now discontinued, example: G80-3484.
Vintage 3000 is not static, moto, NCR, peacocks, Reuters, desko, ...... some brands have cherry custom keyboard. G81 / G80 series change some of the details too much, you can refer to some information. :p

The new ones are not really worthy of being called G80-3000. The thin lasered PBT caps feel cheap, the flexy PCB feels cheap, the thinner flexy case feels cheap, I think you get the picture. I bought a couple to harvest Clear switches from and was expecting a lot better for being a genuine Cherry G80-3000 with PBT caps. No diodes in the matrix, either, so only 2KRO.
Not to mention that the newer batches of MX switches are all a lot more "scratchy" than the older ones, probably due to trying to keep production rates up to meet demand.
If you're willing to put some extra effort in, it can be "improved" sort of to old G80 spec by adding a backplate, opening up the switches and "shaving" the sliders, clipping the stabilisers and putting some better keycaps on, but it's far easier to simply buy a better board from the start.

How about the housing of G80-3077 / G80-3007 compare to old G80-3000?
Are there any difference other than the colour and the logo?

3077 or 3007, only one series, and that is g81.
3077 The logo is white. Shell color is dark gray. Cap bsp.
3007 logo is black, shell color is light gray, cap abs & bsp

Some model with branding, usually that is only difference is add logo, or make another color for that companys style. Otherwise board is exactly the same in most cases to regular stock model of the generation it was made.
