I just ate a whole bunch of creamy blue, yum! Had some devils rock blue in Toronto last time I was there, damn that was some fine green!

Oh an sharp cheddar is beautiful! Baldersons has some decent stuff around here.

Depends really for me, if I am drinking strong red wine and having the cheese with some crackers then the stronger the better!


If I am putting it in a wrap or sandwich then something medium / mature.

If im just eating cheese I prefer as sharp as I can get but if im eating it on or with something I prefer something much less sharpe so it doesnt detract from what ever im eating it with/on. But yea i like most cheeses and eat lots of different kinds and I missed cheese when I traveled to countries that didnt eat it or use it much.

Blue cheese and saltines is one of my favorite snacks, Danish Blue or Maytag.  Stilton is fabulous as well.

My all-time favorite cheese is probably P'tit Basque, but that tends to be more of a holiday purchase.  I serve it with Morbier and a smoked Gouda, for a bit of variety.

Sharp Tillamook cheddar has been a mainstay for multiple uses, but lately I've been trying some raw milk cheeses from upstate New York that are quite interesting.
