Melvang's Smoked Cheese [reopening, see bottom post]

So as some of you remember, I did a GB type buy for some of my smoked cheese.  I know I stated it was a 3 cheese blend, but when I was at the store talking to the guy behind the cheese counter, I learned that 2 of the cheeses I was using were the same thing.  So, for the upcoming buys, I will actually be using 3 cheeses.  The three I am using will be romano, reggiano, and asiago.  I am not sure what you would call this type of buy, but here is how it will work.  The buy link will stay open during the season which I can smoke the cheese without to much worry about melting due to temps in the smoker.  I do hope to aleviate this issue this summer with a home built smoker that separates the smoke/charcoal chamber from the meat and cheese chamber with enough distance to prevent the cheese from heating to the point of melting.  I doubt I will be able to do cheddar and other higher moisture content cheeses, but I am hoping I can do the Italian low moisture "granular" style cheeses.

Either way, this will be a rolling style buy.  The link stays open and when I hit a determined number of portions ordered I will buy, smoke, send invoices, and mail.  I think I am going to start with setting the number of portions to 50.  This may change, I just don't know yet.  Haven't looked that much into asiago to see what it typically gets sold in for weights. 

Prices are going to stay the same for now, $5 per 1/2 cup portion of preshreded blend + shipping + PayPal fees ($.30+2.9%).  At this point I am considering a bit of a discount for a larger orders, over 5 portions, and I will give a fairly serious discount for anyone that wants to buy the cheese in full blocks, not shredded.  This option can include any combination of the 3 cheeses listed.  Last I checked shipping in a flat rate priority box was $6.80, though I believe you can get a bit of a discount printing directly from paypal.  The cavet here is I can only ship to the address registered to the paypal account.  So, as of me writing this, I will ship to registered paypal address for that price, or to any other address for the $6.80.  Also, I apologize, I can only support CONUS shipping.  Me personally, I am pretty adventurous about eating stuff that has sat on the counter overnight and such, but I am paranoid about sending this anywhere with longer than 3 day shipping. 

Thank you for your time and ordering my cheese.  All porceeds will be going towards funding my mill that I will be using to make some kick ass stuff for the forums.

Out of curiosity, where are you getting your cheese?

The cheese counter at a local grocery store.  I know it isn't a super high quality cheese, but I know the reggiano and the romano are both broken off a larger wheel in store.  Not sure about the asiago.

Full blocks only for ungrated.  The price for blocks varies because they are broke off full wheels.

I hate to say it guys, but as it happens this time of year and living in Iowa, the weather is unpredictable this time of the year.  But I am going to have suspend this service until this fall.  The weather has gotten to warm for both running the cheese through the smoker and for shipping in what I deem a safe manor.

All seriousness though.  I probably won't do any cheese until I am done with my current job.  For those that don't know, I work in the union construction trades as a millwright.  As a result, I have to travel for work.  The contractor I have been working for the last 4 years or so hasn't really had me traveling for extended periods of time.  But I do work out of town a lot.  I am currently working at a facility that manufactures a lot of livestock vaccines, particularly rabies.  We are installing a plant addition.  In the last week, I have personally been involved in offloading over 75 tons of machinery and parts.  Three of which included a 16,000 pound reefer unit, a 25,000 pound condenser unit, and today we set the 44,000 pound freeze dryer up on its base.  That one shipped on its side, so that was extra fun.  Long story short, I am working 10 hour days, possibly 12's and some Saterdays in the future, plus it is a 2 hour drive with picking up a co worker on the way.

All good man, no worries. I am planning on bringing them back.

If anyone is worried about the shelf life.  I am still eating off a bag from this spring that has not been in the freezer.

Will be opening a quick flash sale tonight.  All cheese is smoked, and shredded already.  Supplies for this but are finite, orders will be filled in the order they are placed.  Invoices will go out on at least a nightly basis, possibly twice a day.
