Congrats and good luck with the new hobby! It get's so expensive so quickly. Especially if you don't have a bunch of stuff necessary to building keyboards like soldering irons, solder, stabilizers, etc. But it's so fun!
Someone mentioned this when I was getting started, so I figured I'd share as well. If the 7V (or any other premium board) will be your first soldering project, it might be a good idea to pick up a cheaper board to practice soldering. I know there are a bunch of smaller boards that you can experiment with. Off the top of my head,

I ended up picking up a DZ60 from
https://kbdfans.com/, but when it came down to it, I spent a good chunk of money for all the parts. I probably could've started off cheaper if I knew any better. Oh well. I had fun building it.
7V seems like a great board. I'm probably gonna try to get one as well. and GMK Ashes seems to be pretty popular from what I can tell. I keep going back and forth between wanting it and not. Either way, it'll be great. The color combo of the e-white 7V and GMK Ashes will be nice and gray scale.
