Keyboard noob needs help

Hello dear community,

I am new here in the forum and an absolute novice what concerns the topic of mechanical keyboards.
My first better keyboard was a Logitech G815 and a Logitech MX something for work.

As already mentioned I have absolutely no idea about mechanical keyboards but find the latest 60% keyboards quite nice. Therefore, I got me 2x Sharkoon Skiller SGK50 S4 with different switches, 1x EPOMAKER TH80 SE Gasket 75% and an Akko 3068B Plus keyboard. After a few clicks I must say I like the EPOMAKER best. The problem is that I need a German layout.

What would be the best way to go? Can I just order some keycaps online and replace the keys? That was my first idea, however, I would not like to take "so much" money in hand for a few keys.
Or is it best to tinker everything together myself?

Do you happen to have any tips for me?
