Streaming - Calling Audiophiles and alike

So we are trying to get into streaming, and have got a decent setup going to capture/stream PC/Console.
However we ran into a couple snags.

Currently when we try to split the Xbox360 into the TV and out to my capture card we get a couple problems.
A: Boot 360 with the TV as main source, once running duplicate output B to the capture card.
We get video and audio to the TV just fine.
Clean video to the capture unit, no audio or distortion.
B: Boot with the capture card as the main ouput device, then turn on TV.
We get clean audio/video to the capture card.
TV displays "unrecognised signal".

I suspect this is to do with the HDMI spec and "smart" devices communicating.
As such unless someone has a good fix for this, we are going to attempt to take the Optical audio out, which should let us duplicate sound out via HDMI and the optical and just run the optical into the capture card.
In order to do this we need to convert the optical into analog 3.5mm cable.

Anyone got a good suggestion of a device to go Digital Optical to Analog 3.5mm?
