Newbie to mechanical keyboards thinking Ergodox EZ or Falbatech

Hi, I've been a long-time user of the Microsoft Natural 4000 both at home and at the office. I've been happy with the model, both units are still working well after years of ten-hour days, but I'm thinking of upgrading (at home to start) to a split keyboard with mechanical switches. With a day job, a writing career, and a family, I don't have time to solder switches, so I'll pass on building my own keyboard.

I see https://ergodox-ez.com/ and http://falbatech.pl/prestashop/index.php will assemble an Ergodox for about US$300, and charge around US$30 to ship. What are the pros/cons of Ergodox EZ vs. Falbatech?

Second, at home, my computer is in the bedroom. Though my wife sleeps through me clacking the spacebar on the MS Natural, I'd like quiet switches. I'm not sure how to narrow down between MX brown, white, or red. I'm pretty sure I'm bottoming out the keys on my MS Natural. One thing I could try: MicroCenter has several mechanical gaming plank keyboards, I could buy a few with different switch types, test them, then return them all.

Speaking of switches, I see Ergodox EZ uses only Gateron, but Falbatech carries both Gateron and Greetech. I also see Ergodox EZ switched to Gateron from Cherry because Cherry's quality has gone down. Would Gateron be the better choice over Greetech if I used Falbatech?

Finally, I'm not in a hurry to make the purchase. (Even if I'm bottoming out on the MS Natural, my fingers don't hurt at the end of the day). Keyboardio's quiet click model https://shop.keyboard.io/ looks pretty, and palm keys seem cool even though I have no idea what I'd do with them. ;D. Anyone have any guesses how Keyboardio would compare with an Ergodox? Assuming it gets released this year like Keyboardio says it will?
