At Wal-Mart today I saw something that looked interesting and would solve the weight/expansion/bubble issue, as long as you were doing it in tall straight-sided jars.

tp4tissue:
tp4 is using an empty glass jar filled with water as ballast in the large crock to keep the veggie down.

the spring definitely looks good for those exact jars. would work well for small batch stuff.
