How much does feel vary with lost rivets?

Opened up my '88 Model M and found seven missing rivets out of fifty-some. The feel is noticeably different from my '94 M13, which has one missing rivet. The '88 is higher pitched, takes less force, and is much pongier.

How much does feel and sound change with each missing rivet?

Depends on which rivets; I had some broken off on the lower edge, and it made the keyboard feel "diving boardy". I bet you could lose half the middle row ones without much impact.

Of course, mine were all fine in the middle row, so I am talking out my butt.
