I'm just curious how US people feel about their cities:)

East Coast had better food, better people, and lower cost of living. If not for all the video game work being on the WC I'd of moved back right after college.

It's like a sweet/spicy pepper based relish for subs

Silverlake Ramen opened nearby. Lines have been crazy but I caught them in the middle of the afternoon for some tonkotsu w/ pork. Very good!

Homemade pizza with gluten free crust made from scratch. I actually made two pizzas this size and one small one with left over dough.

This is the second one that turned out best. The first one's dough wasn't very cohesive during prep, so it turned out too thick and doughy on the top but crispy on the bottom. This one was thin and evenly crispy.

they certainly don't taste anything remotely like meat, and from what I've read they aren't really much healthier than good beef (or if you can afford it, bison)
I'm all in on bison, I think they could replace cow as the defacto red meat. Better tasting at the mid grade level, better for the environment, and much healthier.

Still not a perfect substitute for the real thing.


And I likes my meats crispy.


Smash burgers bro, they will change your entire burger game. I haven't made a traditional fat patty burger since I invested in a heavy wide smashing spatula. When you get it just right, and the edges of the beef crisp up and mix perfectly with the melted cheese creating this beautiful greasy delicious filigree of crispy beef and cheddar along the edges. Oh man!

yeah vegetable samosas are my favorite often, although only when spiced enough and not just cinnamon, so disappointing when you get a spice-less samosa.

Rice paper - I love this and tried to buy some in UK, but its so expensive!
I dont know those brands and have no idea which one I should choose, but I would love to make my own spring rolls witht those.

Go to the asian supermarket, much cheaper.

I can only talk from my experience in France but in the specialist shop it is about 2.5 euros for a kg pack with in the general supermarket it is 2.5 euros the pack of 6 sheets weighing at i think less than 100g so if it is in the US and France there is a chance it is the same in the UK

Spring Rollz


I really like spring rolls but when I make them, they always seem to end up with a kind of slick/slimy/slippery feel that I dislike both in hand and mouth.

Is there a way to dry them slightly or somehow make them more finger-friendly without killing their essence? Somehow the ones in restaurants are more manageable.

And yes, frying them has been disastrous for me.

Rice paper - I love this and tried to buy some in UK, but its so expensive!
I dont know those brands and have no idea which one I should choose, but I would love to make my own spring rolls witht those.



Go to the asian supermarket, much cheaper.

I can only talk from my experience in France but in the specialist shop it is about 2.5 euros for a kg pack with in the general supermarket it is 2.5 euros the pack of 6 sheets weighing at i think less than 100g so if it is in the US and France there is a chance it is the same in the UK

I think it was something about £7 for 20 sheets or so here in Scotland.

Spring Rollz


I really like spring rolls but when I make them, they always seem to end up with a kind of slick/slimy/slippery feel that I dislike both in hand and mouth.

Is there a way to dry them slightly or somehow make them more finger-friendly without killing their essence? Somehow the ones in restaurants are more manageable.

And yes, frying them has been disastrous for me.

That is pretty much what I do. But, quoting from that recipe:

"place it in the water to soak. Allow it to soak for about 10 to 15 seconds and then remove and place on a cutting board or countertop.
The rice wrapper should still feel pretty firm at this point. It will soften as it sits and as you add the filling ingredients."


Even soaking for as little as 5 seconds makes for a pretty weak and slick wrapper.

My Asian market carries the "3 Ladies" brand but I'm sure that they are all very similar.

2 ways:
either you pay close attention to moisten them just enough and let them absorb the water on their own (they should not be all floppy when you get them out of the water, just slightly less brittle).
or you get specialized racks like they likely use in the restaurant.
honestly i have bought some of those racks but i still use the 1st technique, it is fast and easy, just need to experiment a bit with your particular brand and shape of rice paper.
i think mine are "red rose" brand and a soak them for a maybe 5 seconds, and often stack a few because i like the taste of it and makes them stronger (if you stack you still need to wet them individually, else they will curl)

i thought the whole point of spring rolls was to be fresh and light, deep frying kinda goes against that, but then if you like it deep fried by all mean go for it, i am just not going to follow you on this one :)

I've seen somewhere that actually lower temperatures can make fried food less oily(never tried can't say if it is true), and pre-cooking, if your filling is already cooked there is no need to leave for long in the oil (this is what i do with Chả giò (i just learnt that spring rolls are 2 things in English) and samosas)

The _Rice Paper_ is already cooked and dried, you just dip it in water for 10 seconds, take it out, shake, start rolling, and as you're rolling the paper will soften further.
