How many different keycaps exist in both ANSI and ISO Cherry profile 60%, 65%, and 100%?
-
How many as in layout, material, profile, color, or manufacturer?

there is no definitive answer, there is a lot of variation, and pretty much all keyset will cover both ansi, iso and 100%, so if you were asking for number of different keysets there are new ones every day.
if you are asking for number of keys on a layout the clue is in the name 100% is 101 keys Ansi, iso is 102 winkeyless, 103 with the 2 winkeys+gui key, 60% is meant to be 60 or 61 keys (60% of 101 to 105) and 65% about 65 keys +-1
there is not really a standard 100% sometimes goes up to 114 keys.
trying to help but if you could be a bit more precise in your question we may be able to do better

Sure. How many different blank keycaps are there in a standard 6.25u ansi cherry prof layout? For example, qwertyuiop are all one key, as they have the same size and profile, enev though they have diff legends.

counting by head i think 15
there are 4 row profiles + BS + \ + tab + Caps + enter + 2 shifts + ctrl/alt + numpad 0 + numpad + + numpad enter
although my current board being a focus layout kinda hard to count on it, so i may be wrong :)
