I won't comment on the price as I've not looked around lately nor the quality as I've never touched one of these, but kits 1 and 2 have everything you could possibly need (except keycaps) and kit 4 gives you everything you need for a functional plateless build, if that interests you. With a plastic case and no plate I think it would be too light but maybe you'd like that? It's a personal preference
The PCB already has diodes and resistors soldered so you just need to solder in the switches and switch LEDs which is probably why no-one's done a build log - there's not much to it. If you're planning to build something crazy in the future doing a build log would be good practice though, it's easy to get lost in the process and forget to take pics of a step!
