Let's talk about Ramen. Everyone's favorite noodle delight. Recently i have been really into ramen. I have been going to a Korean and Japanese restaurants sampling their wares and I am falling back into love with Ramen (i am no longer a poor student so i stopped eating them).

Anywho, what are you favorite brands?  Where can i buy your favorite brands?

Personally i like shrimp/seafood flavored ramen.

i have been hearing a lot of praise for Nong Shim Shin Ramyun (Black).

these are expensive (as far as ramen goes) which is promising. i am going to pick up a few packets of them at the asian market on my lunch.

Instant ramen days are over for me. The unhealthiness aspect far outweighs the convenience factor and price. 
Though for non-instant ramen, Ippudo in Manhattan is possibly the cream of the crop for USA options and worth the typical 1 hour wait for dinner. Go during lunch time and the wait time is much lower.
Recently I tried out a nearby Korean owned Japanese restaurant and ordered ramen. They served me doctored up instant ramen grade crap, which was very disappointing as I was expecting freshly made ramen.  I haven't been back there since.  But Ippudo, that's always cravable.

Ah; cheap, mass-produced, processed wheat noodles with artificial flavourings, MSG and sodium. Delicious.

I guess my favourite is probably UK-brand Pot Noodle.

Chinese supermarkets will have really good dried noodles or freshly made noodles. Get some of those, buy some or make some chicken broth. Throw in some chilis or srihacha. Then add some veggies/meat/eggs and enjoy :D.

My mom likes to make a soup where its chicken and onions. Take off all the skin, boil the chicken until you get your preferred doneness, take the chicken out, shred the meat and reserve it for later. Then put the carcass back in with the bones and boil with the onions for an hour or two. When you serve it, put the chicken meat back in with noodles in the soup. It tastes incredible. I ate three bowls of this with noodles when I was at home, I think.

I grew up on Nissin (i.e., "Top") and Maruchan brand ramen.  Recently though I switched to the Korean brand that the TL.net ramen thread recommended, which I get at Safeway.  The noodles are thicker and cook up chewier and less mushy.  Much, much preferred to the 5-for-a-dollar brands.

I'm too wimpy to eat it plain with the entire hot & spicy flavor packet, though.  I'll use maybe half of the packet, and crack an egg in to poach with the noodles.  Sometimes a little parmesan cheese on top, and/or rooster sauce.

It's also tasty fried up with a mixture of peanut butter, soy sauce, and sweet chili sauce, plus scrambled egg mixed in.

me and my fiance refer to the rooster sauce as 'hot cock sauce' and it is way funnier.

i give that saying to you geekhack. go nuts with the hot cock sauce. lol.

I am going to an asian market now. I am going to buy a ton of instant ramen noodle packets and give mini reviews.

I expect great things from this thread.

also: of course we all prefer real ramen to the instant packs guys. but the instant packs have some merit as well.

Those don't have a powder in them but a wet sauce and an spicy oil packet. They are the bomb and are only like $.30 a pack but the packs are only like half the size of usual. I almost never eat them just the package, but dress them up with veggies, meat or shrimp, tofu, hard boiled egg, etc to make a good meal out of them.

actually there are quite a few ramen noodle info sites that always dress up the instant stuff with eggs, green onions, chilis, etc. 

it seems to be something all the kids do these days. it might have something to do with this "swag" and "YOLO" speak I hear at the mall.

P.S. Anyone ever eat their ramen dry?  When I was a kid I would sometimes sprinkle the flavor packet over the loaf of uncooked noodles and eat it like a sandwich.

When I was in college I had the time to fancy **** up but no money to get real food...

Anybody fan of ramlettes? It's basically cooking the ramen noodles and mix egg&cheese with the sauce packet and cook the noodles dry to make an omelette out of it

High Level Ramen Mastery : [ 2 part CONCURRENT]
Requirements:

Pot, must be less than 7" diameter
Large microwavable bowl
Stir-ing stick
Strainer or strainer type noodle scooper


Noodle Part:

Fill pot with exactly 1 inch deep of water

Put 3/4 pack of POWDERED seasoning into water, stir, once boiled, this will create a SUPER_SATURATED solution

Bring to Rapid boil

Place noodle brick

Boil with cover open

As the soup is absorbed into the noodles, BY OSMOSIS, the flavoring will be injected into the noodles.

Once you have very little soup left in pot, remember to stir, or it may stick

By the time you have about 1/8th to 1/4th inch left of soup, it should be done, "remember the part after the water boils is all with covers open"

Remove noodle, place into strainer, rinse thoroughly with COLDEST tap water available. This will allow the noodles to achieve maximum bounciness in texture, and seal in the flavoring.


Concurrent Soup step:

-to be done in parallel timing with noodle procedure

Place all wet seasoning and 1/4 pack left of powder seasoning into microwavable bowl.

Add desired water, stir

Bring to boiling in microwave.



Finally

Combine and enjoy

That is absoutely horrible way to cook it, by cooking it with the seasoning you will not get a pure taste of the seasoning, it is best to cook it then boil fresh water then apply seasoning. You do not want the seasoning to be adsorbed into the noodles

i just put my ramen noodles in a bowl next to my custom poker. the style on it is so hot thatit instantly cooks my ramen.

ok. so i just tried a Nongshim Shin Ramyun Noodle Soup Black, or Black Edition as i like to call it, and the verdict is....

GOOD! but not worth 4x the price of Top Ramen.

It's great for ramen, especially if you like to drain the liquid out, I know some like to have 'noodle soup'....

I keep mine in my desk at work. It is also great for cans of soup etc...it cleans very well also.

Microwave is only necessary if you Overcooked it.. they do the same thing with over-boiled dumplings..  If you follow my method, you will not overcook in the first place.


using the 1/4 left over pack, you make a separate batch of soup in the microwave.  This way you Get enough seasoning into the noodles. AND you get your so called pure taste of the soup mix.


The point of this is to remove the waxy taste from the noodles.

So lays has this contest for new flavors one of the flavors is rooster sauce flavor (siriracha) it's gonna be discontinued soon and ppl ebay it for 4x normal price. I have found a bag or two at a local supermarket (i actually have the manager put away a bag if he can... local managers are nice in small neighborhoods), it's got a nice kick to it that's different from other "hot" chips. Note, i use rooster sauce all the time with pho, and am no stranger to it.

Pro tip for noodles, if you don't have it, or it didn't come with the instant noodles, put 1/4 tsp of seseme oil and it makes instant noodles 100x better, even the crappy american nissin or mauchan crap.

Good tip. It greatly enhances the flavor of any asian style noodle soup.

- wow. this **** was good. tasted like a really good version of Nissin Top Ramen Shrimp. The broth was delicious and the noodles were slurp sloppy good.  I rate this higher than the Shin Raymun Black I tried yesterday.

Adding green onions a little hot cock sauce would really kick this ramen off. I would also add some sesame oil.

9/10

would eat again.

Try it with some grill charred squid + tofu skewers, green onion and sriracha.
sesame oil is good, but I like peanut oil more, especially if you let some naga jolokias steep in it for a few weeks.

LOL :D..  You can break things down into infinite complexity, or knowing that our capacity is limited, you may choose to live with approximations.


1/2 cup soy sauce
1/2 cup mirin (sweet rice wine)
1/4 cup sugar

+

Eel

That's the most usual way that they make it..

You don't really need the mirin, as that's just an alcohol used to carry off aromatic oils..

Now tell me, what else is in there.. :D

Shin black is easily one of my favorite ramens. It's not as spicy as regular Shin and has a full-bodied pork flavor with a big 'ol veggie packet. Yummy stuff if you can find it, but also like $4 a packet for instant ramen.
Also, someone said don't add soy sauce to fried rice? You are absolutely mad, soy sauce is delicious on almost everything!

Basically all comes down to MSG water and noodles. :D

Oh and soy sauce tastes great on everything because SOYSAUCE HAS MSG due to the fermentation process which ALL soysauces go through .

also for me...

ramen is good with leftovers, (depending on the leftovers of course)

like if i have left over steak, it goes great in the broth, doesn't have to be beef flavor either (probably overwhelmed).

i do throw a cooked egg on there if i want some protein, rather than the raw egg style (just doesn't taste good to me, plus i make good eggs, with that nice bottom crisp that when placed on top of noodles is like a barrier).

Ramen Rater and amazon are the sources that told me shin black raymun is the best instant ramen of all time.  Don't get me wrong it is way better than anything nissin makes, it just isn't better than Sapporo Ichiban.

Sapporo Ichiban Oriental Flavored Ramen

wow. this **** is the jam. it is really good, but it has beef stock in it. as somone who does not eat beef i am worried this is going to give me the 'work runs'.

freaking really delicious stuff though. my favorite so far. would def eat again. the noodles are fantastic and the broth is green onion good.

i have to take 1 point off for it since it has beef in it.

So relevant to this thread.  Being out of town this weekend I was able to stop by an international food place and pickup a bunch of different types of ramen.  My haul:

I definitely did notice that the spicy factor was reduced, but I think it had to do with the fact that there are two soup bases instead of just one.  I would go with the regular shin ramyun rather than the black edition.

I'd be hesitant to try a new brand tho, I've only tried one or two brands with those kind of noodles (both had terrible effects, my bathroom suffered considerable damage, as did my rectum).

I'd be hesitant to try a new brand tho, I've only tried one or two brands with those kind of noodles (both had terrible effects, my bathroom suffered considerable damage, as did my rectum).

I don't know if it's the plastic that does it,...  but yea.. my toilet also suffered concussive damage after I consumed this type of noodle in a bag.

I think it may be the fact that these were meant to be stored in very cool temperatures, but the asian stores don't give a **** and leave them on warm shelves...

Guinness pork broth and beer brat ramen

8 cups water

2 cups Guinness

1 yellow onion in quarters

Salt

White pepper to taste

1/4 stick of butter (probably would've used sesame oil if I had any)

Soy sauce

Pork neck bones

Roast the bones until they are nice and browned @ 400°F for 1-1 1/2hrs. Put the bones and all that yummy brown stuff (use some of the Guinness to get the caramelized stuff off the pan) all into the pot of water and simmer for about 2hrs, adding the rest of the beer in the last 45mins. Pan fry the beer brats and add them. Some green onion or leeks would've been nice.

I didn't let it rest overnight because I was hungry then, but you probably should. You might want to use just a little less beer, it's a powerful taste. Maybe 1 1/2cups, but I liked it this way.

Nong Shim Shin Ramyun is my all time favorite instant ramen.

For actual ramen, I really like the ramen they serve at Ippudo in New York City....or the random places I went to in Tokyo.

No doubt. Shin Ramyun rocks. We never eat them with the packets of flavoring. Instead, try Soybean paste (just a little bit) and some of the tiniest flakes of dried seaweed. You can buy all this from your local Asian grocery store.

Yesterday, I discovered I DO NOT like Nong Shim Neoguri seafood spicy flavor. It could have been good but they ruined it with seaweed for me. I truly dislike very strong seaweed flavors.

Naw, you are correct in terms of being a utilitarian, where the concept of flavor FOLLOWS the concept of recharging your fuel cell.

The pursuit of flavor is an escape into hedonism.. Since for the most part, humanity will not starve to death, There must be a MATERIAL extension of personal progress.  AND so many people play this out in different forms, SUCH AS collecting keyboards, trying different noodles for the "taste".. etc

I don't remember how Ippudo was like, but some ramen shops allow you to add extra ramen (basically an extra bowl worth of noodles) for an extra dollar fifty.

Pork based soup ramen tastes the best in my opinion.

Really depends if you drink the broth (which is extremeeeely unhealthy)

I actually prefer the noodles with broth more than anything else (like meat)

That said, random street vendors in Japan taste even better than Ippudo and don't have nearly as much salt/msg, but of course it is Japan :P.

Thats terrible, where I live ramen cost $.30 to $2.50 a package for the 'fancy' ones.
There isn't any restaurants though, which is odd since we do have like 4 Japanese places and about 2 dozen sushi and none have ramen, udon or anything like that on the menu. We do have a few Vietnamese places with great Pho though.

For non-instant ramen, I have dreams about the tonkotsu from Jin Ramen in Harlem. This is their spicy tonkotsu with corn & bok choy :9 They do give you an absolutely ridiculous ladle to use though, I don't know why they don't just give you a normal soup spoon. You can kaedama/kae-soup-ma (:D) too

That's actually pretty standard for handmade noodle/real ramen broth soups at a restaurant. In Japan many places charge ¥10,000(around $100) for an authentic bowls of ramen. If you're paying that for packages? Well that's crazy.

karashi mayonnaise is what it's called... so it's just karashi mustard + mayo

since i've moved to nj (closer to my ny home) i have more asian centric stores, i have fricking access to H-mart (korean chain supermarkets) and real chinese food stores. now i can buy real ramen without going on amazon and paying crazy shipping fees. (i could also drive into chinatown but **** that)

my stomach is starting to not handle the crazy powders in the viet/japanese noodles, the shin ramyun is just killing me now

I eat Maruchan beef or shrimp flavored ramen with one or two eggs added at the end so that the yolk is still soft, thinly sliced beef, kimchi, a slice of American cheese, sesame oil, lime, and sriracha... It is un****witable.  Sometimes I'll add some other stuff to really make it a legit meal, but the item's that I mentioned are how I normally eat ramen.

the risk is probably small.. but this is NJ eggs not Japan eggs which are all pasteurized.

I'm guessing ur also young, so you'll live even given an infection.. at worst acute-gastritis.  but it's just not a good idea to eat raw anything unless it's been specifically prepared for.

you CAN find pasteurized in the USA, these you can drink like Rocky.. and do ur weeaboo thing with the ramen.

Im 25 and used to drink those egg whites in carton for breakfast when i was into my working out phase, never had a problem besides some really rank farts. I must be pretty lucky with my immune system, however i heard the risk of salmonella is actually surprisingly small in eggs, and is blown out of proportion by the media. *tin foil hat*

It's estimated that about 1 in 20,000-30,000 eggs has salmonella. The rest are safe to eat raw. So you have a 1 in 20,000-30,000 chance every time you eat an egg of coming into contact with the bacteria, but on top of that there's a good chance your immune system will deal with it and you won't get sick regardless.

The elderly, those with immunodeficiencies, pregnant/breastfeeding women, infants should probably avoid uncooked egg to be on the safe side. If you're a healthy adult then you can probably take your chances, depending on your aversion to risk in general.

oh man. this weekend i had some Spicy Ankake Ramen at the Japanese Cultural center in Denver. holy **** that was good! so friggin good.

I live in Asia, and not only do I rarely eat Ramen (only when forced to, such as when the people I'm with want to eat Ramen), I don't even know the stuff you people eat.

Seems that Americans are more familiar with these things than us folks here.

It's somewhat true. I'm studying overseas in the UK and London has a ramen rest & it's probably the yummiest one I've tasted compared to the one in Malaysia. So far the best I've tried was Ippudo,(I think they have one in Sg as well), Marutama, and the one in London (Shoryu). Yummy !

Making things halal makes them inedible, unless they were originally conceived and developed as halal foods to begin with eg beriyani dishes. I suspect many Japanese dishes originally used pork broths which were removed to satisfy right-wing Malays.

If you're in TO, I would suggest Kinton. I have done a few bowls there and it's pretty decent. I'm going to have to try a few more. New to the area.

Ippudo is alright. If you're at London, there's a couple of ramen places.
Shoryu is pretty nice, been there a few times.
Kanada Ya has good reviews as well but I've not been there.
