Alps Keyboard, Steel vs Aluminum Plates?

Hi! Wanted to get your opinions on this topic. Making an Alps custom and I wanted your opinions on plate materials.
 It seems that most Alps customs are made with Stainless Steel plates, but aluminum is also cheaper lol. What are the pros and cons to each?
What are you're guy's preferences?

Stainless is stiffer and obviously heavier, something many value.
As for sound, the difference isn't that great based on the (few) apples to apples side by side comparisons I've seen.

If you want to transport it, get aluminum, if you want it to sit (heavily) on your desk, go stainless or brass.
