Hrrrm.. I think the dryness is because they keep it warmed up all day, even after it's been cooked..

They were kept at warm temp to long which is what drives them out.  But I do have fairly high standards for my turkey legs.  But when I smoke my own in the winter, that tends to happen.

Well I haven't done anything but an occasional trim for months. But it's actually curly so it's longer than it looks.
