I recently found and purchased a brand-new Apple Extended Keyboard II.  I bought it because I want to use its dampened ALPS switches in one of my existing Omnikey keyboards.

My question is- if I put in the Omnikey's switches in the AEKII keyboard, would its value/demand be decreased? If so, by how much?

a brand-new Apple Extended Keyboard II should be left alone. It is worth a lot more new and rare if it not meddled with.
Get a used one to pull the switches out of. They are cheap and easy to find used.
