I made a killer souffle last night with shredded pork, black garlic, and this incredible 4 year aged gouda. Never made one before and was hesitant because you are putting a lot of trust in the process. You spend all the time prepping and making the dish, then you just assume the oven will do it's job transforming it into something edible. I was really worried it would come out burnt or rubbery or not fluff up properly, but everything went perfectly!

Looks good, I'll have to try them out someday. It's difficult for me to try a lot of foods though, because my SO is allergic to wheat.

Ooh that is good.. I need to get back into juicing carrots and cucumbers.

I HAD POUTINE FOR THE FIRST TIME.  :eek: It was everything I hoped it would be

I also had some really good pizza the other night.. Made with bruschetta, grilled chicken, mozzarella and feta then finished with fresh basil and balsamic reduction.

Last night I made basil pesto mac and cheese with andouille sausage

The other night I had pulled pork sandwiches with a unique off-brand "Kansas City Style" barbecue sauce.

First off, before I go on, let me say that any sauce you see outside of Kansas City itself with the phrase "Kansas City Style" on it (or merely invoking Kansas City) is probably not going to be anything like actual Kansas City barbecue sauce. Here, there are two types: the Jack Stack-style smoky, somewhat sweet and a bit spicy sauces, and the *real* gems of Kansas City, the two major Henry Perry style sauces (Gates' and Sons and Arthur Bryants).

The Henry Perry-style sauces both have the same general ingredients, with some differences (Arthur Bryant's contains lard and a small amount of molasses, while Gates' does not--otherwise, they are both more or less identical to the original Barbecue King of KC's sauce.) They are absolutely nothing like Jack Style style smokey sauces or the KC Masterpiece clones. They are not sweet. They are not thick. They are not smoky. They are peppery, savory, kick you-in-the-mouth-with-their-taste-and-you-will-want-more-because-it's-just-that-good sauces; they have sweet and spicy variants, but really, the traditional sauces are pleasantly harsh, not spicy.

The Kansas City Style sauce we put on the pulled pork combined the smoky sweetness of the Jack Stack style with the peppery, kick-you-in-the-gut goodness of the traditional KC sauces. It was the best of both worlds--the only thing that would have been better is if the meal had actually been slow-cooked in a smoker with hickory.

Oh, and the pork was insanely tender too.

Whoa, whoa, whoa I did not know that was a thing. But alas now I have to try it, how much hot sauce do you typically add?

I do 2-4 drops of something with some substantial heat. You don't want a flavorful sauce or too much that would cover up or change the beer's taste, you just want to get that nice hit of heat at the end.

Yeah they are in heat order, but I'd switch the Inner Beauty and Queen Majesty places. The wings are in order as well, 12 o'clock is the Crystal going clockwise in heat.

Yeah they are in heat order, but I'd switch the Inner Beauty and Queen Majesty places. The wings are in order as well, 12 o'clock is the Crystal going clockwise in heat.

I haven't tasted anything at mcdonald that was bad... It's all been pretty good..

Never liked their grilled chicken (sandwiches).

They need to bring back the "Mc DLT"
