Hi, I am looking for a list of all signature plastics keysets that would be the equivalent of the popular GMK keysets database.

Signature Plastics maintains a gallery page. It looks to be pretty comprehensive - I'm not seeing anything missing: https://pimpmykeyboard.com/image-gallery/

Just toured through and made me wish I had the money for the likes of Skull Squadron and Modern Selectric back then.

I don't see any of 7bit's Round 4/5/6 sets.

You might try an internet archive search for keypuller.com it was an attempt at a keycap archive by Matt3o but the website is no longer hosted.
