Can you actually ride a horse off a cliff ?

Wouldn't it stop on its own ?

No? Why would it stop without human intervention? Horses get stuck in holes and ditches all the time.

I assumed that's for horses wearing blinders..

Horse have a higher weight than humans. You'd need a stronger bridge.

Even then you and the horse would die from fall damage unless if you had Slow Falling II or Feather Falling applied to you.

I suppose it would come down to training and trust in the rider. Most horses would probably get spooked when it got near rocks or a dropoff. Horses are timid creatures despite their large presence.
