Do most of them start at Winter - Summer? Most GB's are done now and theres no new ones.

GB do not have seasonality. Each one runs at its own pace and happens at its own time. All are independent.

GBs for keycaps are usually run for a month, every month. At any given point in time you are guaranteed to find couple keycap buys.
Speaking of keyboard group buys, they do not have any strict schedule and happen once in a while. To make things worse, keyboard buys are sometimes limited, so they last for a few days, hours or even seconds. Although, keyboards group buys usually start with an interest check, so you better monitor IC section to find out what you like and then be prepared for group buy start.

as someone about to start a gb on tuesday, i can say with certainty there normally isn't just one factor in deciding. there's vague seasonality in that few GBs run in November and December due to people being strapped for cash for the holidays, and on the production side any gb that extends through chinese new year is very likely to encounter delays. but other than that, gbs proceed all willy-nilly, normally at the rate the gb runner gets samples, makes corrections to prototypes, is able to do testing, etc.

There's plenty of GBs all year round for lots of different things. They get posted here and on Reddit quite frequently. Just gotta check in from time to time to see if there's new ones for something you might be interested in.
