Reading the QMK Documentation (https://beta.docs.qmk.fm/using-qmk/software-features/feature_layers) the momentary layer function only supports the first 15 layers so the limit will be the memory of the ATMega32, which is the most common chip for keyboards.

It's safe to say six layers won't be a problem, how many were you hoping for?

I think hes asking how many physical layers the pcb will have. I believe most keyboard pcbs are dual layer.
