I don’t think I’ve ever eaten a plain potato and thought there was even the slightest notion of salt.

Same for tomato.

Maybe you should drink more water TP

Depending on the tomato, but Potato's are pretty much tasteless to me or more of a subtle taste w/ no salt.

I only tasted potatos withour salt when I forgot to salt the water when boiling them. Horrible.
Tomatos - very watery flavor without salt, however if its really good one, flavor is amazing, so refreshing. Not always but mostly I use a pinch of salt on those on sandwiches.

Baked makes for a tighter spud w/ superior internal gelatinization of the starches.

It may be the boiling which dilutes the salty flav from the outer edges.

Boiling leaches out flavor, nutrients, and who know what else. Sometimes it makes sense, but generally other techniques are preferable.
