Title: 65% keycaps?

 I know this will sound like a stupid question but I can't seem to find a PBT keycap set for the RK68 because of the right shift and 1u bottom row. Could someone help?

Yes, standard (104-105 keys) sets you can easily find won't fit, you have to look for sets which include around 120-150 keys.
I bought a PBT set from YMDK on aliexpress for my 65%, it has all I need (it even has an ISO option).
