it's hard to tell since some group buys have bloated prices and higher profits than others, based on popularity the Jelly Epoch would maybe be up there.

Most likely the polaris or vega, but I do recall fuji65 having some absurd amount of units

Total profit or profit per capita?

The highest grossing total is likely not a keyboard but a switch group buy.
Back when it wasn't easy to find individual switches (or get alternatives), much less for cheap there was a running group buy for Cherry and Matias switches run by 7bit, it most likely destroys any keyboard group buy several times over.
