I eat real cheese, and real mayonnaise. Avoid "fake meat" with methyl-cellulose in it.

The USA is heavily racially mixed by comparison to most national populations; ordinarily I'd expect it to be about average. Its position at the top is probably due to the horrific amount of chemicals and processing common in American "food" products.

No idea what it's made of though and I don't see any similar products in stores near me.
