Title: Hot sauce - Is this win?
Post by: Qwerty on Fri, 11 February 2011, 19:45:43
I went grocery shopping today and figured this chilli sauce looked good, and it was on sale. When I got it home and was just about to put it on some noodles, I burst out laughing at what I saw, and knew that I had to delay dinner in order to set up my camera to get a few good pictures.

I usually buy the same brand, it's pretty good.

That after-death sauce is pretty good... Haven't seen it around here lately though.

Sriracha sauce is one of my favorites. It's fairly popular and is commonly called "cock sauce".

I often use sriracha, it's one of my favourites...
For what it's worth, this sweet chilli sauce is remarkably similar to President's Choice "Memories of Thailand". So if you're a fan of either, it might be worth knowing.
Goes great on salmon with a little spice-rub :)

I linked it for fun to a coworker and he actually bought it. He gave a drop of it to another coworker, who promptly ran for water/milk/ice cubes. This was followed up with further workplace experiments, with similar outcomes :flame:

I've got a rough patch of skin on my hand from where I got a nasty rash after slicing fresh scotch bonnets...
Maybe I'm allergic (had no problem eating them)... But damn.

El Yucateco XXX Habanero sauce is about $1.75 at my local Food-4-Less and is rated 11,600 Scoville. Naturally it's a daily go-to sauce for this chili head. Great for a bowl of chili or refried beans.
I also have Sriracha and Tabasco on hand for what they do well--like going into soups.
I've had some of Dave's pepper extract sauces in the past. Love 'em but they are expensive.
I grow my own habs and red savinas in the garden and eating them raw is really a trip if you don't mind the pain and love the endorphin rush that follows. I throw 'em in the freezer and they are used throughout the year when I cook curry, crockpot chili, and refried beans.

Sounds like a good brand Qwerty.
Serious note: does it taste like the sweet chili sauce McDonald's had not too long ago? That stuff was the best sauce ever but I never thought of looking for it elsewhere.

Yet another topic I am familiar with...
Both Blair's and (ESPECIALLY) Dave's sauces are overrated, for the most part, but they are most peoples entry into the "real" hot sauce world. The MAJORITY (not ALL, but most) of their **** is extract based, which in my opinion means "tastes like ****". I like hot, but I won't sacrifice flavour.

El Yucateco XXX Habanero sauce makes for good soup. I have a bottle in my fridge :)

The last time I remember eating McDonald's I was about 6-7 years old and they still sold Pizza Happy Meals.
So I really can't tell you :P
It's not very spicy at all though, if that's a concern. Which was a little disappointing to me... I actually think the President's Choice sauce is just a bit spicier (though I haven't cared enough to compare them side by side).
Put some on a bowl of noodles and mix it in. Goes good on a chicken sandwich. Worth trying if it sounds like something you'd like. Just realize that's it's more of a sweet sauce than a spicy chili sauce IMO.

I only use sriricha for Pho soup, tastes funny to me in anything else. El Yucateco really messes me up, but it's a nice kind of hot.
Herr's just released Texas Pete flavored chips, really tastes like someone just poured Texas Pete all over a batch of chips.

Hot bean paste. I used it for my kung pao until more than 20 years ago when I switched to sambal, sambal being what you see from restaurants in making such dishes (in my experience). I think the true traditional way for kung pao is to use dry hot stuff in the wok and not hot sauces, though. Maybe someday I'll try that.
The thing for heat lovers in kung pao is that to use enough sambal to get enough kick, I find that the flavor balance of the dish is changed. Recent years when I want that extra level of heat in my kung pao I use the regular amount of sambal and add some finely minced habanero; tastes great and is plenty hot.
If anyone cooks kung pao at home feel free to list your recipe! I have experimented quite a bit in the past and wouldn't mind an infusion of new ideas. Please make it one that you use and love.
