Whats a good source for keyboard controllers I could use to convert a laptop keyboard among other things to usb? or can I pull one from an old Dell usb keyboard(work has plenty they throw out)?

Chances are you'll need a programmable microcontroller. Look at the controller projects for terminal Model Ms, Model M USB conversion and such.

Different keyboards have differently organized connections between the controller and keyswitches. Your laptop keys will work with virtually every common controller, but such keyboard will almost certainly report different keys than you have actually pressed.

That's why you will probably have to build your own controller.
