Any cool circuit board projects I could do to get my soldering skills down? Cheap preferably and easy as I'm new to electronic workings outside of PC components.

there are some nice stuff in sparkfin.com

I can't see anything on that website.

sparkfun.com, jameco.com, makershed.com, parallax.com
plenty of projects on those sites from beginner to advanced. Good luck!

They sell multiple components and DIY kits. I think they have some books that will show you how to built something basic

I will be making a nixie chessboard soon. But it is a VERY ADVANCED project, and a lot of experience is needed. When you gain enough experience you can do projects like this as well. Just something to look forward to.
I am upgrading/expanding a lot of my setup for this project. SMD is a pain, but will be a lot easier now.

You could follow my keyboard project if you wanted. All the designs are open source.
It's a scalable keyboard. IE, it tiles in any direction in 4x4 tiles.
Less "qwerty", more control surface.
