Basically a double shot is a plastic cap with a second plastic injected into it to create an image or letter(s). The benefit is that the image will never wear out. You can even sand the cap down and it will stay.
Unfortunately only abs can be double shot, due to pbt having shrinkage issues when molding.
As for what caps can be doubleshot, pretty much any. I myself have an alps double shot cap. Just depends on if someone gets a different style made, which is hard without a group buy.

Double shot is a process for manufacturing keycaps.  Plastic being molded into another plastic.   Like the above information, the legend will not fade.  The plastic for this process is called ABS.  Most modern keyboards you see now a days use ABS key caps, but the process used to make the images is pad printing (a cheap process).  Through this process, the legend will fade with long use.

The other common plastic used for keycaps is PBT which can be found on the Leopold FC700R you are using.

Unfortunately, my double shot Wyse keycaps are wearing out my Filco.  They rub against the left edge of my keyboard when I push them down and it's getting scraped.

Sand the edge of the caps.
