This is a PCB mount board? And how well does the wireless work?

PCB mounted board.  The wifi functionality worked fine with a plain old $5 dongle.  The only issue I can assume people may have with using the wifi is that the battery container is inside the case which you have to unscrew to open.  If you were to mod by adding a door the battery would be much easier to access.

Does this board use the NKRO over USB hack like the Noppoo Choc Mini? And I assume by the PCB-mounted switches stem swapping is possible like the Poker?

I believe this supports NKRO via PS/2 and the switches can be swapped like you assume.
