If I want to play X5 - X8,  are the best versions the PS2 version? or the PC version?

Assuming I can use the ps2 emulator..

5 and 6 were on the Playstation not PS2, and 6 was never ported to PC. For me the series died with 6, but I would guess like any X game it's best played on its respective console.
