If I am putting it in a wrap or sandwich then something medium / mature.

But yea i like most cheeses and eat lots of different kinds and I missed cheese when I traveled to countries that didnt eat it or use it much.

My all-time favorite cheese is probably P'tit Basque, but that tends to be more of a holiday purchase. I serve it with Morbier and a smoked Gouda, for a bit of variety.

Sharp Tillamook cheddar has been a mainstay for multiple uses, but lately I've been trying some raw milk cheeses from upstate New York that are quite interesting.
