I'm going to give Cherry MY a try. If I'm going to do that I want to try them in a nice quality standard ANSI layout board.
Can I hear a shout out to some models/years I should try?

the real question is, what keyboards come with MY that aren't Cherry G81 keyboards.

... are there some at all? There's the G81-3000 of course, a G81-7908 but that one should be rather rare... Else, the only thing I know about is an electronical typewriter named "Triumph Adler Gabriele 7007L" (in fact, all models from the 7007 series should have MY with blue Cherry Dyesub caps - that's the first reason why there are interesting in my opinion ;))
As far as I know, MY hasn't been adapted by other manufacturers (by that I mean, you won't find something like a Filco Majestouch MY edition or something).

Do all the G81-3000's use a steel plate? If not, do you know which year they switched over?

For the record, different generations use different stabilizers. I believe it's explained at Deskthority wiki.

You will be wanting one with the old plate-mounted black MY's :

Don't rely to much on the label for identifying key-caps,
I've seen 'H'-labeled boards with dye-subs !!
If you are lucky you may find a 'NCR'-branded board with an industrial-gray case :)
