I'm looking for a keyboard with Cherry MX Brown switches because I like the tactile feel, but don't want to annoy the other people at work/home.
I use a Mac and so I had thought I really wanted one with media keys (and a FN key) but now I
know that I can use a keyboard remapper for that, and that's fine with me.
I was looking at the Professional S Professional from Das Keyboard, but they shrink the left
modifier keys to make room for the Fn key.
Can someone recommend a full-size keyboard with Cherry MX Brown switches?
Bonus points for mac key caps for command/option (including glyph)
But I'm not holding my breath.

You might consider the matias quiet keyboards. They use a quiet ALPS switch that is really rather nice. I got the chance to try a few switches the other day. They are also made for apple computers.
It doesn't have cherry browns, but it's tactile and quiet: A winning combination. Of course the stems aren't compatible with cherry keycaps, but it has apple ones already.

For new keyboards, you can try Filco/Leopold/Das/Choc pro/CMstorm Quickfire/Keycool brands. Topre switch is very much similar to brown too.
For old keyboards, I still use a Compaq MX 11800 brown at home.

Go for a Filco /w browns, or if you want to spend a bit less aim for the QFR.

I am using a Poker 2 Brown and a HHKB Pro 2 with my MBA. They are great.

I would recommend the Ducky Pro Dyesub PBT. I'm also on mac and what button remapper do you use? I would love to remap some of my keys.

I got the Matias Mac keyboard a few weeks ago for my wife. It has a few negatives, so I'm looking for something better.
The Matias:
1. keycaps are a little more wobbly
2. the keycaps have funny alternate symbols on all the letters, which makes the letters not stand out
3. the symbol on the mac "option" key is not the modern glyph used on apple keyboards.
I have another KB from Das Keyboard that I like. It's very loud and pre-Fn-key.
I have a keyboard from Unicomp that I like, but it's also very loud.
Another minor plus would be a keyboard where I could order custom keycaps
for the Mac modifiers, and eventually the media keys and other special functions
in the locations that I eventually choose to assign them.
I just installed KeyRemap4MacBook, and it seems to do the trick for accessing my
volume controls without the dedicated keys. But I haven't used it for long, so I
can't really vouch for it yet.

Mx brown - good
Matias - better(it's more tactile, and very quiet)
55g Topre - best(even more tactile, and also very quiet)

you might want to check out KBTalking Pro at kbtalkingusa.com
its full size, I think it comes with brown, detachable USB cable and bluetooth which paired with 10 devices at the same time, and switching between them is easy. it has PC mode, Mac mode and Android mode, where the F-keys becomes media keys in mac mode.
i use it with my macbook and i can control pretty much everything like brightness, volume, mute, like a normal apple keyboard, and then also use it with my iphone and ipad, works great, with cut copy paste, and home button etc.
