My favorite of all time is Marvel vs Capcom 2 (arcade or Dreamcast) just because the roster is ridiculous and the move sets are insane. Plus it has Venom, Akuma, AND Blackheart ;D
I felt the Dreamcast port was closer to the arcade than the PS2 version.
Other great titles:
KOF '98 (Neo Geo)
Garou: Mark of the Wolves (Neo Geo - arguably the most balanced and intricate skill curve of any fighting game of all time)
Soul Caliber II (favorite 3D fighter)
Guilty Gear 2 (Dizzy <3)
BlazBlue: Calamity Trigger
notable mentions go to SSF4, SF3: 3rd Strike, Super Smash Brothers Melee, and Samurai Showdown V(arcade, never played the home port)

Super Smash Bros Melee/Brawl are probably my favorites.
Falco in Melee
Luigi/Zelda/Link are my mains in Brawl
UFC is also ****ing fun. Who doesn't like knocking your friends the **** out

That was a great title, but I felt like SCII improved on it in every facet other than some balance issues(Link, I'm lookin' at YOU)

I personally hate street fighter, but I do love Tekken... So my fav is probaly tekken tag 2 but 1v1 mode

I can't get into tekken, because it's too hard....
I only like guilty gear xx reloaded... I even finally mastered the dust loop despite the fact that it was 3 years after accent core plus...

Me too! Mostly because it takes not much skill to be 'good' at them.

I never played the 64 one, but I had the SNES version! It was fun :)

Never been a big fan of these games, but Street Fighter 2 is an awesome game, and was even more awesome when it got out.
And punch out was fun!

My favorite is the first Samurai Shodown (SNK). I know many consider it's sequel to be the best in the series but the first does it for me.
Also out for a while I've been meaning to try Arcana Heart.
I never got into Tekken/Mortal Kombat. For a while I did play Killer Instinct although I sucked at it.
