I am getting a cherry g80-11900 NIB in the mail soon, and it uses a PS2 cable that breaks into a mouse and keyboard input. Is it possible to change the original controller and substitute it with a teensy? And if I do so, will the keyboard go from 2kro to a higher kro?
If that isn't possible, how can I get the keyboard to turn into a USB input, not a PS2 input?

And you won't get NKRO out of a board that doesn't have diodes for every switch, unfortunately.

The KB in question has two PS/2 devices on it. A Kb and the touchpad (mouse). While you could replace the controller with a teensy and modify some code for it to accept both, it's much easier to just take in the PS2 signals and convert them to USB.
I stand by my recommendation to buy a PS2 to USB adapter and just use that. I suspect that combining the two signals to one PS/2 end may work with the ID innovations: if not you can always get two or use a combination KB/mouse one.

Yeah, I had one of those combination keyboard/mouse PS/2-to-USB adapters I bought at Best Buy. I had success with older keyboards with it.

The belkin is well received, but the exact model number of the "good" one I don't know. All the other beldin ones are "okay". They have 2KRO and tend to "reset" sometimes, just like most of the other PS2 USB adapters.

the old one that works the best? Its different from all the other black common ones. Only problem is it only works for windows up to vista, but that's most likely because 7 wasn't made yet. Is this item the best one to get?
