Title: The "Ask a professional mexican" thread
Post by: demik on Thu, 02 January 2014, 12:41:25
I really don't want to do this, but **** it, It'll be informative and useful for you guys. I was kinda weighing whether or not I wanted to do it, and figure nothing too terrible could happen.

I've been a professional for 3 or more years (25 years an amature before turning pro). Blah blah blah. Don't know me. Blah blah blah have other pro friends. Blah blah blah retired to become Viet.

I will try my best to answer your questions. My answers are based off my experience, which is not "textbook".

Ask away.

Hum, so that's why there was an "habanero salsa/chily bar" at the hotel when I went there. Yea, eating a raw habanero salsa the way we eat a salad before the real meal was such not a good idea (I didn't get past the first bite). Them 30 min after were not the best of my life. The only good part is that I managed to put some in one of my friends meal without him noticing it.

Best? Not sure. But for margaritas might as well get the cheapest since you're masking the taste with the mix.

What's the average chilly a Mexican can eat (raw) without considering it too hot?

Habanero.

The chilis that are more common for daily salsas are xalapeño and serrano. Ocasionally chipotle. Habanero goes with certain dishes like Cochinita Pibil and others that are originally from Yucatán, that are not that frequent in daily dishes around the country.

I think checking an entire chain off your list due to one incidence of food poisoning is pretty ridiculous. Any number of circumstances could have played into that, many of which were most likely to be related to that particular location as opposed to the entire chain.

Not that I care what you eat or not.

Both ways are equally common. i.e. The city of Xalapa, capital of the state of Veracruz is offcially written as that, and can be also written as Jalapa, but it is less common. This city is where the chiles were named after, even now, there is a company that canned xalapeños filled with mead.

Well that makes a lot of sense, that explains why you consider habanero a common chili. Cocina Yucateca has strong and nice flavors no other Mexican regional cuisines have. Besides, when visiting Cancún you can enjoy authentic dishes of cocina yucateca, just an added bonus to those crystal clear waters. My family wants to go to Cancún this year, ouch, I'd pass some of the GB to save some money for that trip.  :)

Please elaborate what the term professional mexican means in your context.

Thanks for bringing up Corona Familiar, thought it was the same beer as our typical Coronas (crap). The dark bottle does prevent light from altering the taste, thus the difference in taste between the Extra and Familiar. Will have to try it out now.

Dude, Corona Familiar is where it's at! And yeah, I've heard the clear bottle gives it the skunk taste that extra has. Which is why I avoid almost all mexican beers.

safe to say i haven't.

i never understood the point in that though, stupid gangsters.

Do you rep Sur or Norte?  Shooting sideways will increase the likelihood of you getting hit with hot shell casings when they eject, unless you use a revolver, but those aren't "cool."

Also, why are baby goats so cute, and yet so delicious in my barbacoa taco?

What are the chances of finding a shiny Mexican in the wild? I really want to get into competitive battling ever since getting Pokemon Y. I've been trying to catch one for months! I've also been trying to breed one using the Masuda method, but to no avail.

Should I keep on trying to catch one in the wild or should I continue trying to breed one? Thanks!
