I'm probably gonna use one of them to host vpn for my buddies and my movies and potentially several cs-go server instances.. (once i get the game for $5)

If you put some NOS stickers and come CCFL lighting with a window on the case you can get an extra 1GHz overclock.

I will help you set one up if you give the other to GH so the board can be a little less flaky.
Best bet would probably to get a light weight GPU that dosen't need additional pci-e power like a quadro FX1800. It's still a good enough card for workstation use and can be had for cheap. Or cheap low end cards like nvidia GT *20 or some such.
As far as SAS controller... most of the older 3GBPS have 2TB disk limit which is why they are so much cheaper now days used. Too many people want to build larger storage than that without using piles of drives and less drives in an array is usually a good thing.
If it were me, I would consider pulling the boards and etc and putting them in smaller desktop style pedestal cases with 'normal' PSU... and getting whatever you can out of those rack cases and server PSU. Maybe do so one at a time so the cost doesn't get stupid.
Some are just standard EATX and it's hard to tell from the pics you posted.
So far can't seem to find the pin-outs, but a cheap multimeter can fix that in like 5min.
As for the GPU its a ****ing server, you don't need no stinking GUI.

GPU can do more than render pixels. There is lots of CUDA or OpenCL stuff these days... though if you're going that way loads of CPU power is usually not so needed as generally it's replaced by GPU.
Though you don't really need a GPU unless you are going to use it to multitask something where you can offload to GPU. Just need to use software that you can do send work to server, or just rdp and run applications that way instead.
You could always use the FC as a cluster interlink. Hook them all together and start FAH.
I googled for 5.25 PSU. If you want a decent 'cheap' controller that supports trim you can grab something with ASMEDIA 106x controller. I have one and it works well enough and has good speeds very close to native intel for SSD. There are some cool cards that have 4x msata too which are really nice to set up to be used for journaling in storage spaces with parity sets.
I have a single msata single sata version with the asmedia controller for my boot drive. It's been working like a champ. I might get one of the 4x msata ones later on to use for journaling. Parity storage spaces writes are pretty heinous slow without that.
I got mine off ebay from Hong Kong... it's like 80% less that way.
Those with that marvell controller also supports trim but the throughput is not as good.
