**** yeah angel hair pasta. love it. it's super good with creamed stuff for sure.
texture is indeed great. haven't ever found it cheaper than TOP ramen but I imagine it can be.

Eric Ripert from Le Bernardin in NYC makes an angel hair pasta dish with sea urchin roe cream and chives, and caviar, which just seems so good. I love sea urchin roe.

Add baking soda while you cook the angel hair.

So don't take the wrong step.

Anything will taste like crap if you cook it wrong.

Cook an egg for too long and it takes like sulfuric rock.

Cook RamenxAngelHair too long and it tastes like ammonia.

Sounds fair to me.

The higher surface area to volume ratio the faster it'll cook so thinner noodles or powdered pasta (basically flour) will cook super fast.

I actually think I might stop eating top ramen... and just get angel hair..

it's $1 per pound...  I heard from someone else it can get to 50 cents.

Around here you can get some Mexican brand of pasta for .25 a pack. I don't care for it much though, it doesn't really have any flavor to it. Not that plain pasta usually does, but that kind even less so. I much prefer the egg Capellini nests, sometimes the trio kind spinach and tomato flavored mixed in, or the garlic flavor is really nice with some things.

Too thin, no surface for sauce to cling to.

Best pasta noodle in the known universe is penne.  [Please note: for Italian pasta you must use 100% durum wheat semolina, or you're eating egg noodles.  If you eat egg noodles you should be ashamed of yourself.]

Other best noodle in the universe is soba.   But that's buckwheat.

Meat-filled noodles, like ravioli and tortellini, cannot be compared to regular noodles, b/c the quality of the filling varies, and greatly determines the enjoyment.  I have had "lobster" ravioli that tasted like old fish.  And I've had lobster ravioli that blow your mind.  So, the filling is more important than the noodle.

Other great pastas:

1.  Spaghetti:  still the undisputed King of Pastas.  Spaghetti al pomadoro is the distilled essence of Italian cuisine.
2.  Bigoli:  Spaghetti's older brother.
3.  Gemelli:  but only with a heavy meat sauce.
4.  Pappardelle:  big and flat, and so good when made fresh.  In heaven, they serve pappardelle with oxtail ragu every Thurs.

Angel Hair pasta unfortunately is the ass-end of the pasta spectrum.  It is not well-liked in Italy for a good reason:  It gets mealy when you cook it.  All pasta should be "al dente" when you eat it, which means it should be "toothsome".  If you do not understand, make friends with an Italian person, and ask them to show you.

eh, I almost consider it a french thing, so I can see that!
it's very different from all the classics for sure. I like them all though.

overall pasta generally taste all the same..

Thicker ones have more texture.. but all of them can be prepared al dente by shortening cooking time.

As far as french vs italian..   I got one category,  white people..  ya'll look the same to me.

I want to quit... but I can't... Every pack of noodles is the last pack... yet tomorrow... I make more... There's are unlimited packs just there in the pantry... can't stop....

Has anyone else attempted to rid themselves of noodle-addiction?

This stuff is gonna kill me I know it... (http://emoticoner.com/files/emoticons/onion-head/oh-onion-head-emoticon.gif?1292862514)

Carbs are the devil

I'm gonna go make some right now.. sigh......  when the craving comes....... you just give in..

All sorts of excuses..

Last box, this is the last box...  Tomorrow, I'm gonna eat only healthy fruits and Veggies..

Well, I'll just reduce the amount I eat at one time slowly.. and quit over time..

Today I'm a little down.. Need a pick me up, then I'll definitely quit...

Everyone else is eating it.. can't be that harmful..

I still eat my carbs on saturdays =) (AKA Beer Day)

I suggest reading a book called 4 hour body by tim ferriss. Before you read it though, watch his speech on TED Talks. I lost 30 pounds and have increased a lot of muscle before I went to basic. I still follow his diet recommendations till this day.

Yea it may as well be crack cocaine..

MSG tells your brain .. EAT THIS..  I read somewhere that it's actually psychoactive.. not sure..

For example, if you down lots of MSG really quickly.. You can hear ringing in your ear..

I've had good-egg noodles..  But I've also been really burnt by them a few times..  Because I think, they use some sort of alkaline wash in making these things.. and sometimes.. that scent comes through too strong, or they screwed up some how.. and you got this whole pot of noodles that tastes like the inside of a hospital..

When I saw your mention of angel hair I instantly thought about fa cai - hair fungus. It's one of the most awesome Chinese foods that is now banned due to environmental damage.

Never figured out how come people can't grow it in an indoor farm.
