I have a light weight aluminum container with a lid..

I put the rice in there with some water..  and swirl the entire container in a gentle circle..

The reason you don't want to apply excessive force or harsh stirring is because if you crack the rice grains..

..it will increase starch released into the water during soaking and cooking.. therefore harming the final taste texture..

Why wash?  When I lived in China I just learned to eat around the occasional dirty patch or rock :llama:

What does this mean?  I grew up in the States and moved there for many years. Do you mean it's possible to have resistance to heavy metals?  It always seemed it was more of a "don't talk about it, it's not a problem but I'll buy top quality bottled water anyway" kind of thing there.

if you think the tap is bad in NYC,   China cities are 10x worse..   It even taste funky after using triple stage filtration..
